I have been dying to try the latest trend in the health food world- fat balls- and I finally had the time this week to try them out! I found the original recipe from Lee From America and modified it slightly for my own preference and dietary needs. Since I am going through a flare, I opted out of all of the nuts and stuck to just almonds, cashews, and sunflower seeds. If you are having a flare up of Crohn's or Colitis, or maybe you have diverticulitis, and you normally have to stay away from whole nuts, have no fear! These little gems are ground so fine you shouldn't have any trouble digesting them.
In fact, I first tried using a food processor and I couldn't quite get it ground fine enough for my gut to be happy, so I opted for my brand spanking new Vitamix and it worked wonders. The dough was ground extremely fine and perfect for fat balls.
The last alteration I made was the addition of an extra date because I have a serious sweet tooth. If you are trying to cut down on natural sugars, feel free to lower the number of dates or even eliminate them altogether.

- 1 cup coconut shreds
- 1/2 c. Coconut oil, melted
- 1/4 cup coconut butter
- 1/4 cup sunflower seeds
- 1/2 cup cashews
- 1/2 cup almonds
- 2 tbsp cacao nibs
- 1 tsp cinnamon
- 4 pitted dates
- 1/3 c. almond milk
- Combine everything in a Vitamix (a food processor or other high-powered blender will work too!) and blend until it is a wet dough.
- Roll dough into small balls, place in an airtight container, and then store in the freezer.
- Remove from freezer and let sit for about 5 minutes before eating. Enjoy!
